Ciambotta with herby polenta

Ciambotta - an Italian version of ratatouille with sweet roated vegetables and cannellini beans, served with tender herby polenta. The tomatoes in this dish are rich in lycopene, a powerful antioxidant, which is absorbed better when tomatoes are cooked.
